First of all, welcome all my new followers, you guys are awesome and I hope all your weight loss dreams come true!
Now my weight has been going through all sorts of craziness since I started weight training at the gym/had a 3-wk vacation/made some poor food choices. Last night I cooked a delicious vegan seitan stew, for which I can't really tell you the recipe, because I made it up, and also this amazing side dish that I WILL tell you the recipe for, because it was AWESOME.
Vegan Soyrizo Garlic Mashed Potatoes Recipe5 smallish-medium white potatoes or the equivalent volume of whatever potato you like, cut into chunks
1 head garlic and a splash of olive oil
12 oz (1 package) soy chorizo (in the tofu section of your grocer's refrigerated case)
2T Smart Balance margarine
1/2 cup original flavor rice milk
Salt
First, I like to leave the peel on the potato because I am lazy. Put the potatoes in a big pot of boiling water. While that's happening, peel the outer layers off your garlic head, but leave the skins of the cloves intact and the whole head in one piece. Chop off the top 1/2 inch of the head, so you can see the cloves. Place cut-side up on a piece of tin foil, drizzle with oil, completely wrap in foil and roast at 400 in your oven (or in my case, toaster oven) for 30 min. When it comes out, let it cool a little, then squeeze the cloves out and mush them with a fork a bit. By now your potatoes should be done.
When your potatoes are soft, mash them. Add Soyrizo, garlic, rice milk, margarine and salt to taste (you will need less salt than usual because soyrizo is salty). Enjoy! This makes a ton of food, which I later had to heat up and I added a bit more milk and margarine so it wouldn't dry out.
Anyway, I got away from the point of this post which is that today I weigh 121.5 lbs, which is my lowest recorded or rememberable adult weight, last reached on 3/08. This is despite lots of the aforementioned stew and mashed potatoes, and vegan desserts. I did gym hard though, lest you think that I just eat whatever I want and get all skinny. Anyhow, I'm perfectly happy with that weight and could be it forever. Maintenance is not as fun as losing weight but it's nice to get to eat (A LITTLE) more.
